Potato Poppers

1/2 onion, chopped
1 Tbsp. Margarine
1/2 cup Mashed potatoes
1 cup Cooked brown rice
1 Tbsp. Tomato paste
1/2 tsp. Salt
1/2 cup bread crumbs
1/4 cup Parmesan cheese, grated

Preheat oven to 350 degrees. Saute onion in margarine until golden. Combine remaining ingredients, stir in onions. Form into 1 1/2-inch balls, place on cookie sheet. Bake until lightly browned (about 10 to 15 minutes). Makes 12.
