Green Chile Cheese and Rice Bake
8 oz. Monterey Jack cheese 
2 cups sour cream 
4 oz. canned chopped green chilis 
4 cups cooked rice 
Salt and pepper to taste 
1/2 cup grated Cheddar cheese 
Preheat oven to 350° F. and grease a 2-qt. casserole.
Cut Monterey Jack cheese into strips.  
Mix sour cream and green chilis together in a small bowl.  
Alternate layers of rice, Monterey Jack cheese and sour cream in a greased 2-qt. casserole pan.  
Bake for 30 minutes. 
After 15 minutes of baking, sprinkle top of casserole with grated Cheddar cheese.
