Another Broccoli and Rice Casserole

4 cups chopped cooked or steamed broccoli
2 cups cooked rice (do not use instant)
2 1/2 cups Cheddar cheese, grated, divided
1 (10 3/4 oz.) can cream of celery soup (Campbell'sŪ) or use 3 cups cream sauce
1 (10 3/4 oz.) can cream of mushroom soup *
1 tsp. salt
1/2 tsp. pepper

Preheat oven to 350° F.

Mix all ingredients in large bowl; hold back 1/2 cup cheese. Put in large baking pan or casserole dish. Sprinkle top with cheese. Place in oven, no top on dish or pan, no more then 20 minutes. When cheese is melted, remove. Ready to serve
