Antipasto Rice Salad

2 cups cooked Uncle Benís converted or boil-in-bag rice
1/3 cup Italian salad dressing
1 1/4 cups assorted deli meats, such as turkey, ham, salami
1/4 cup diced cheese
1/4 cup black olives
1 cup sliced vegetables, such as green pepper and green onions
2/3 cup chopped tomato


Toss the rice with the Italian salad dressing. Stir in meat and cheese. Stir in olives and sliced vegetables. Chill, then stir in the tomato before serving.
