Favorite Rice Pudding

To Cook Rice:
1 cup rice
2 cup water
1/4 cup sugar

Other Ingredients:
1 qt. whole milk
1/2 cup sugar
2 eggs
4 TBL. flour
6 TBL. sugar
1 cup whole milk (or other)
2 tsp. vanilla
raisins, to taste, if desired
cinnamon or nutmeg, if desired

Cook rice with water and sugar according to pkg. directions (long-grain, please; no minute rice).

Meanwhile, in 2 qt. saucepan, scald 1 qt. of milk; add 1/2 cup of sugar to this; stir to dissolve.

In a separate mixing bowl, beat together the eggs, flour, 6 TBL. sugar, 1 cup of milk and vanilla until smooth.

When milk (step 2) is hot enough (foamy on top about 15 minutes over medium-high heat), add egg mixture (step 3), stirring in well. Then, add the cooked rice. Add raisins, if desired. Cook over medium heat about 5 minutes, stirring constantly until mixture is thick like pudding and just starts to boil. Remove from heat and pour into Pyrex dish or casserole that has been sprayed with cooking spray. Sprinkle top with cinnamon or nutmeg; refrigerate until firm.
