Pink Rice

Pink Rice

1/2 lb. of bacon, chopped
1 large onion, chopped
1 small head of cabbage
2 cups converted rice, raw
1 large can tomato juice
salt and pepper

Cook bacon until almost crisp. Add chopped onion and cook until clear.

Slice cabbage as for coleslaw. Add to salted, boiling water in a large saucepan or Dutch oven. Cook for three minutes. Add the uncooked rice to the cabbage and continue to cook for 11 minutes more. Drain and add to bacon and onion mixture.

You may continue in a large frying pan or dump all into a roaster for the oven. Add at least half of the can of tomato juice and allow to cook until the rice absorbs the juice. Keep adding and stirring until almost all of the juice is absorbed and the rice is cooked. Salt and pepper to taste.
