Creole Rice Cakes
Serving Size : 4

4 slices bacon
3 tablespoons onion -- chopped
3 tablespoons green pepper -- chopped
1 cup cooked rice
1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon pepper
1 cup canned tomatoes
2 eggs -- beaten

Fry bacon crisp, leaving bacon fat in pan. Chop bacon and combine with all other ingredients in the order given to make a batter. Cook as fritters in the bacon fat.
