  Turkey or Chicken Pie 
  1 lb leftover cooked turkey or chicken 
  10 cups mashed potatoes 
  1 onion, chopped 
  2 celery, chopped 
  2 carrots chopped 
  parsley, chopped 
  frozen mixed vegetables 
  mushrooms, chopped 
Preheat oven to 350° F.
  Saute onion celery and carrot. Add meat, parsley and mushrooms and frozen vegetables. Cook until tender crisp.
 Spread 5 cups of mashed potatoes in large lasagne pan. Spread meat mixture on top. Cover with remaining potatoes and bake at 350 F for 30-40 minutes until hot and golden and serve. 
  Note: Adjust the amounts of filling and potatoes to match your crowd and the dish.
