Orange Marmalade-Pecan Roasted Turkey Breast
"Holiday Celebrations"

3-4 lb turkey breast, skinned and washed
1/3 cup olive oil
3 cloves garlic, minced
1/2 tsp. salt
1-1/2 cups finely chopped pecans
1/2 cup orange marmalade, slightly warmed

Preheat oven to 375 degrees. Combine olive oil, garlic and salt. Rub generously over washed turkey breast. Place turkey breast in roasting pan, roast for 30 minutes.

Remove turkey from oven. Spoon marmalade over the turkey breast and immediately press pecans into the marmalade (this works best with two people). Return turkey breast to oven, roast another 30-35 minutes or until a meat thermometer reads 170 degrees in the thickest part of the breast. Remove from oven, allow to cool for 15 minutes before carving.
