Turkey: Italian Meatballs

Italian Meatballs

1/2 cup fresh bread crumbs, from white bread
1 lb. ground meat (combination is good)*
2 eggs, lightly beaten
1/4 cup Romano cheese, freshly grated
1/4 cup Parmesan cheese, freshly grated
2 cloves garlic, minced
1 tsp. Emeril's Italian Seasoning, or your favorite
1 tsp. salt
dash pepper
2 tbsp. fresh parsley, chopped


Combine all ingredients in food processor. Pulse until mixed well (you can do this by hand with a bowl and a wooden spoon if preferred).

Spray a cookie sheet with cooking spray. Place meatballs on tray. Spray the tops of the meatballs with spray too.

Preheat oven to 350F. Bake meatballs for 20 minutes.

Serve with rice or pasta, extra sauce on the side.

* Use 1/2 lb ground pork and 1/2 lb ground turkey. You can use beef or veal too.
