Turkey Ravioli Lasagna

Taste of Home Magazine for April/May of 2000.
Turkey Ravioli Lasagna

1 lb. ground turkey or beef
1/2 tsp. garlic powder
salt and pepper to taste
1 cup grated carrots
1 cup sliced fresh mushrooms
1 tablespoon olive oil or veggie oil
1 jar (28 oz.) spaghetti sauce
1 pkg (25 oz.) frozen cheese ravioli, cooked and drained
3 cups (12 oz.) grated parmesean cheese
minced fresh parsley as a garnish

Preheat oven to 375 degrees.

In a skillet, cook turkey over med. heat until no longer pink; drain. Sprinkle with garlic powder, salt and pepper; set aside.

In a small saucepan, cook carrots and mushrooms in oil until tender. Stir in spaghetti sauce.

Spread 1/2 cup sauce over bottom of a greased 13x9x2 inch baking dish. Layer with half of ravioli (make sure to cook it first), spaghetti sauce mixture, turkey and cheeses. Repeat layers. Sprinkle with parsley if desired.

Bake at 375 for 20 to 30 minutes or until bubbly. Uncover and bake for 10 minutes longer. Let Stand for 15 to 20 minutes before serving.

Yield: 12 servings
