KooKoo Roo Chicken

The brine for poulty is:
2 qt water
6 T kosher salt (3 T table salt)
2 T brown sugar
1/2 t black pepper
1 sm bay leaf

Marinate overnight chilled.

Roast chicken as usual.

Of course, people have different salt sensitivities, so you may want to tinker with the salt level (up or down).

The 2 qt recipe:
2 qt water
6 T kosher salt or 3 T table salt)
4 T brown sugar
1 t black pepper
1 lg bay leaf.

Incidentally, large poultry, e.g., a goose or turkey, will require many multiples of this recipe.
