Herbed Roast Chicken

  Herbed Roast Chicken 

  1 (3-4 lb.) chicken 
  Sprig or two each Parsley, sage, rosemary and thyme. 
  2 cloves garlic, minced 
  1/2 stick butter 

Preheat oven to 400 F.

Mince herbs, mix with garlic and softened butter. Loosen chicken skin 
and rub butter under skin and over thighs and breast. 

Salt chicken inside if so desired. Roast at 400'F until chicken is golden
brown about 1 hour.
