Chicken with Prunes
8 - 10 chicken breasts, bone in, halved (can be skinned or with skin on)
1 head garlic, peeled and minced
1/4 cup oregano, dried (this is not a typo)
Kosher salt & freshly ground black pepper
1/2 cup red wine vinegar
1/2 cup olive oil
1 cup pitted prunes
1/2 cup green olives with pimiento
1/2 cup capers and 2 tsp caper juice
6 bay leaves
1 cup dark brown sugar, packed
1 cup white wine
parsley for garnish
Preheat oven to 350° F.
Combine ingredients except for sugar, white wine and parsley. Cover and
marinate in refrigerator overnight.
Place all ingredients in baking dish(es) in single layer, spooning
marinade over. Sprinkle brown sugar atop chicken pieces and carefully
pour wine around chicken (do not rinse off the sugar with the wine).
Bake for 50 min. to 1 hour in preheated 350 oven.
To serve, place chicken and marinade solids on a platter and garnish
with parsley. Spoon some of marinade over chicken and pour remaining
marinade in a gravy boat to pass around.
