Smoked Grilled Club

24 white sandwich bread slices
1 medium sweet onion, thinly sliced
1 pound thinly sliced smoked turkey
12 oz. package smoked bacon slices, cooed
8 oz. sliced smoked cheddar or smoked gouda cheese
Grey Poupon Honey mustard
1 stick butter

Spread 8 bread sliced with mayonnaise. Layer evenly with onion, turkey, and 8 additional bread slices. Top evenly with bacon and cheese. Spread remaining bread slices with honey mustard, and invert onto sandwiches. Melt half of butter in a large skillet over medium-high heat. Add 4 sandwiches, and cook 2 minutes on each side or until lightly browned. Repeat with remaining butter and sandwitches. Serve immediately.
