Potato Stuffing Chicken Breasts

3/4 cup butter, divided
1 large onion, finely chopped
1 cup finely chopped celery
4 cups mashed potatoes
2 eggs, lightly beaten
1 cup dried bread cubes
1/2 teaspoon poultry seasoning
1/2 cup chopped parsley
1 teaspoon salt
1/4 teaspoon pepper
4 boneless, skinless chicken breasts

Preheat oven 375 degrees. Grease 9x13-inch pan.

Melt 1/2 cup butter in large skillet; saute onion and celery for 5 minutes. Turn into large mixing bowl. Add potatoes, eggs, dried bread cubes, poultry seasoning, parsley, salt and pepper; mix well. Spread in pan.

Arrange chicken breasts on stuffing; dot with remaining butter. Sprinkle with paprika.

Bake in preheated oven, 375 degrees, for 25-30 minutes, depending on size of chicken breast or until nicely browned and chicken done.
