Crispy Baked Chicken
1/2 c. cornmeal
1/4 t. pepper
1/2 c. flour
1 chicken cut up
1 1/2 t. salt
1/2 c. milk
1 1/2 t. chili powder
1/3 c. melted oleo
1/2 t. dried oregano


Mix the first six ingredients. Dip chicken in milk, them roll in cornmeal mixture. Place in a greased 9x13 inch pan. Drizzle with oleo. Bake uncovered at 375 degrees for 50-55 minutes or until juices run clear. Yield: 4-6 servings.



Oven Fried Chicken

3-5 pounds of chicken pieces
1/2 c. flour
1/3 c. parmesan cheese
1/2 c. cracker crumbs
1 tsp. seasoned salt
1 1/2 t. garlic powder
1 t. basil
1/2 t. oregano
1/4 t. pepper
1/2 t. salt


In a freezer bag combine all the spices and flour and store until the day you bake your Oven Fried Chicken. Place the chicken pieces in a freezer bag and freeze. To serve, thaw chicken overnight in the refrigerator.

Preheat oven to 400F. Spray a cookie sheet with nonstick spray.

Dredge the chicken in the flour mixture and place on cookie sheet. Bake for 30 minutes. Turn chicken over and continue to cook for 30 minutes more.
