Chicken Fritters

  1 1/3 c. sifted flour 
  1/2 tsp. baking powder 
  1 tsp. salt 
  2 eggs, beaten 
  2/3 c. milk 
  1 tbsp. salad oil 
  4 lg. chicken breast 

Cut chicken off bone and cut in pieces about 1" square. Set aside. 

Mix dry ingredients and liquids in separate bowls. 

Roll chicken in liquid, then in dry ingredients.

Deep fry in hot oil until puffy and golden, about 6 to 10 minutes,
turning once. Drain on paper towels. 

Serve at once. 

Makes 4 servings.
