Fireman's Chicken

1 cut up chicken, skin removed
1-1/2 c. Russian dressing
1 envelope dry onion soup mix
1 cup apricot preserves
salt and pepper to taste
1 medium onion

Preheat oven to 350 F.

Place chicken in baking dish (13 x 9), salt and pepper to taste.

In 2 qt. saucepan, place Russian dressing, onion soup and preserves; heat until mixture is blended together.

Pour over chicken, cut onion into rings; place on top of chicken. Cover with foil.

Bake at 350 degrees for 40 to 45 minutes, then uncover and bake an additional 15 to 20 min
