Chicken Pot Pie

Pastry to cover 3 qt. casserole or frozen puff pastry dough
1/2 Cup butter or margarine
1/2 Cup flour
1 tsp. salt
pepper to taste
2 Tbsps. onion, finely chopped
3 Cups chicken broth
1/2 lb. mushrooms - sliced
3 Tbsp. butter or margarine
3 Cups chicken - cooked & diced
2 Carrots - finely chopped
2 Stalks celery - finely chopped
2 potatoes, cubed


Preheat oven to 400 degrees F.

Melt butter in saucepan over medium heat. Blend in flour, salt, pepper and onion. Gradually stir in chicken broth. Cook, stirring constantly until smooth and thickened.

In a small frying pan cook the mushrooms in butter.Add mushrooms, chicken, carrots, celery and potatoes to sauce. Mix well and pour into large casserole. Cover with pastry and slash (watch it!!) to allow steam to escape.

Bake in preheated 400 degree oven for about 30 minutes or until pastry is golden and chicken mixture is bubbly.

Serve with a green salad, green peas or something green to enhance the visual effect.
