Chicken Casserole: King Ranch Chicken Salad

King Ranch Chicken Salad
(low fat version)

6 chicken breasts, cooked, skinned, boned and chopped
1 med. onion, chopped
4 oz. can chopped green chilies, drained
4 1/2oz. can chopped black olives, drained
1 c. low fat mayonnaise
1 c. low fat dairy sour cream
2 c. crushed baked tortilla chips, divided
1 c. grated low fat Monterey Jack cheese
1 c. grated sharp low fat Cheddar or Colby cheese

In large mixing bowl, combine chicken, onion, chilies, olives, mayonnaise and sour cream. Add 1 c. chips, mix well.

Spread half the chicken mixture in a 13x9" baking pan which has been greased with cooking spray. Spread Monterey Jack cheese on top. Top with remaining chicken mixture, then Cheddar cheese. Top with remaining chips. Bake in preheated 400 F oven, 10 minutes, or until hot and bubbly.

Note: Can also make this with 1 pkg. small flour tortillas, torn into small pieces.
