Chicken Broccoli Casserole with Spaghetti

1 large frying chicken
1/2 cup butter or margarine
1/2 cup flour
2 1/2cups light cream or milk(*)
2 1/2 cups chicken broth
3/4 cup grated sharp cheese
1/2 cup parmesan cheese
Juice of 1 lemon
1 Tablespoon prepared mustard
1 Tablespoon chopped parsley
1 1/2 Tablespoons grated onion
2 1/2 teaspoons salt
1/8 teaspoon rosemary
3/4 cup mayonnaise
2 boxes (10 ozs) frozen broccoli
1/2 lb spaghetti or noodles.

Boil chicken, reserve broth. Bone chicken. Preheat oven to 350 degrees F.

Melt 1/2 cup butter in double boiler, blend in flour. Slowly add cream and broth, stirring constantly. Add grated cheese, Parmesan cheese and lemon juice. Season with mustard, parsley, onion, salt, pepper and rosemary. Remove from heat and add mayonnaise. Cool. Add broccoli (cooked just until crisp).

Prepare spaghetti, drain and rinse.

In a large casserole, arrange layers of spaghetti, chicken, sauce and broccoli. Be sure to end up with sauce on top. Bake uncovered in a 350 F. oven until bubbly. You may cook the chicken the day before, if desired. This may be prepared in the morning and not cooked until just before serving time.

Serves 10.

(*)May substitute 1 1/2 cups milk and 1 cup sherry.
