Chicken Ball Appetizers
Recipe Circus

1 lb ground chicken (500 g)
2 egg whites (whisked)
1/4 cup water (50 ml)
1/2 cup plain bread crumbs (125ml)
2 tbsp grated Parmesan cheese (25 ml)
1 tbsp dried parsley (15 ml)
2 tsp basil (10 ml)
1 tsp tarragon 5 (ml)
1 clove garlic (chopped)
pepper to taste
cooking spray

Thoroughly blend all ingredients. Shape into small balls about 1 inch in diameter.

Line a baking sheet with foil and spray lightly with cooking spray. Preheat oven to 325 F.

Form balls and line up on sheet so that they are close but not touching. Bake in oven for 20 minutes or until juices run clear. Serve on cocktail picks with a dipping sauce or refrigerate for up to 2 days. Appetizers may be reheated in a non-stick skillet, in the microwave or in a hot oven.

Makes 45 (1-inch) balls.
