Eggplant Pizza

1 eggplant
1 egg, slightly beaten
self-rising flour, to coat
oil for frying
tomato slices
sliced American Velvetta cheese

Preheat oven to 350 degrees. Peel and slice eggplant.

Dip slices in beaten egg. Coat slices in self-rising flour. Brown slices in medium hot oil. Do not have so much oil in the skillet that they are covered, (just enough to brown each side). As they get browned place them on a paper towel to wait on other slices to get done.

When all are browned, place each slice on a cookie sheet. Top with a slice of tomato and a slice of American Velveeta cheese on top of tomato. Put in 350 degree oven just long enough for cheese to melt.
