Thin Crust Pizza

2 tsp. instant yeast
2 tsp. sugar
1 1/2 tsp. salt (2 tsp. kosher salt)
1 Tbs. dry milk
3 cups Italian-style flour (King Arthurs)
1 cup water
2 Tbs. olive oil
Laura Brody's dough relaxer (according to directions)

Set machine for dough. When finished kneading, divide dough in half. Cover each half with lightly greased plastic wrap and allow to rest 15 minutes.

Roll out dough to 3/16" thick. Place on baking sheets. Cover again and let rest 30 minutes.

Preheat oven to 450 degrees. After the 30 minutes, bake for 5 minutes. Remove and cover with your choice of toppings. Return to oven and bake 5 minutes more. Rotate pans and bake 5 minutes more or until hot a bubbly.

Makes 2-12 inch pizzas.
