Honey-Wheat Pizza Crust

3 cups white all-purpose flour
1 cup wheat flour
2-3 Tbsp. Italian Seasoning Spices
1/4 cup grated parmesan cheese (fresh or dry)
1 cup warm water (115-120 degrees)
1 package yeast
1 tsp. sugar
1 cup scalded milk
1/4 cup honey
Semolina flour

Mix the flours, spices and cheese together, blending well. Mix water, yeast and sugar together, proofing yeast until it is foamy. Mix milk and honey together. Add liquids to the dry ingredients, mixing to make a somewhat sticky dough. Turn out onto a floured surface, knead for 5-10 minutes. Form into a ball and place in mixing bowl - let rise about 30 minutes.

Punch down dough and divide in half. On a surface floured with semolina flour, roll out dough to about a 14 inch circle. Pre-bake on a pizza stone in a 450 degree oven for 5-6 minutes. Remove from oven, add favorite toppings and bake another 10-12 minutes.

Makes two 14" crusts.
