2 pounds phyllo dough
3 cups butter -- clarified
2 pounds walnuts -- coarsely ground
3/4 cup sugar
2 tablespoons orange blossom water
2 cups sugar
1 cup water
1 teaspoon lemon juice

Preheat oven to 400 F. Butter a 17x13" tray. Combine walnuts, sugar and orange blossom water.

Using 1 lb. of phyllo dough, spread individual sheets in tray, brushing each with butter. Do not butter last sheet.

Spread nut mixture evenly over phyllo. Using remaining phyllo, repeat first step. Cut into diamond shapes.

Bake 400 for 15 minutes. Reduce heat to 325 and bake for additional 45 minutes.

Bring sugar and water to a boil. Boil for about 20 minutes. Add lemon juice immediately before turning off stove. Should be the consistence of Karo syrup. Cool. Pour cooled syrup over baklava.

May be made up to a week ahead of time.
