Homemade Pasta

Here are the directions for a half load (serves 2-4). Measurements for full load (serves 4-6) after directions.

Step 1. Machine off. Lid open.

Step 2. Fill Pasta Measuring cup to the lid with flour. Pour this into mixing bin. Close mixing bin lid.

Step 3. Select pasta shaping die you want to use. Set it in very hot water for a minute.

Step 4. Put the warm die on the front of the machine and secure it with the locking ring.

Step 5. In pasta measuring cup: 1 egg, 1/2 tsp. flour, 1 Tbl. olive oil, water or juice filled to half load line. Beat mixture with a fork or shake vigorously with pasta measuring cup lid closed.

Step 6. Switch to mix and slowly add the liquid through the slot in the lid while mixing. Mix for 1-2 minutes. Pasta dough should be evenly mixed with small pea sized lumps. Not powdery(to dry) and not in one large wet lump(to wet).

Step 7. Turn off and let machine completely stop. Never switch directly form mix to ext. or ext. to mix with out stopping first. Turn machine on EXT(extrude) and watch your pasta come out the front. Cut it off at desired lenghts with the cutter(or a table knife).

Step 8. Cook fresh pasta in at least 6 quarts boiling water. Drain and serve with sauce. Smaller shapes take only 1-2 minutes. Do not overcook.

**measurement for full load:
2 pasta measuring cups flour
2 beaten eggs
1 tsp. salt
2 Tbl. olive oil
water or juice to full load line.
