Beer Deer

deer roast, approximately 2 lbs.
2 (12 oz.) cans of beer
1/2 cup brown sugar
2 Tblsp. molasses
salt and pepper to taste


Place the meat in a large resealable plastic bag; pour beer over it, seal bag and refrigerate overnight (or do this early morning to serve for supper).

Remove and pat dry, and set aside. Pour beer, sugar and molasses in saucepan and cook over medium heat, stirring until sugar disolves.

Sprinkle meat with salt and pepper and place in a large heavy skillet. Pour beer mixture over it. Cover with a lid and bring to a boil, then reduce heat and simmer for 1 1/2 hours or until tender.
