Combination Casserole: Tourtiere

Tourtiere

6 slices bacon
1 lb ground beef
1/2 lb sausage meat
1 small onion, minced
1/2 c boiling water
1 clove garlic, minced
1 1/2 tsp salt
1/4 tsp pepper
1/4 tsp celery seed
1/4 tsp sage
pinch of ground cloves
1 cup mashed potatoes
Pastry for double crust pie


Cut bacon in small pieces and fry until cooked and not crisp. Drain fat. Add meats and onions, cook until meat is browned. Add water and spices. Simmer, covered, 45 minutes.

Combine meat with mashed potatoes. Cool slightly.

Line pie plate with pastry. Fill with meat mixture. Cover with top crust, seal and flute edges, slash top.

Bake at 450 F for 10-12 minutes. Reduce to 350 F and bake 30 minutes more.
