Heavenly Tri Tip Sandwiches

1 Tri-Tip, untrimmed
20 cloves garlic- peeled
2 TBS Paprika
2 TBS New Mexico Chili Powder
2 TBS California Chili Powder
2 TBS Black Pepper
1 TBS oregano
1 TBS ground cumin
1 tsp cayenne pepper
2 TBS granulated onion
1/2 tsp celery seed
2 TBS Kosher salt
3 TBS Brown Sugar
SALSA
Approx. 48 ozs of crushed canned tomatoes
1 med. minced onion
1/2 cup cilantro
Garlic-removed from the meat. Smashed.


Cut pockets in the trip-tip with a sharp knife and bury the cloves of garlic into the pockets. Mix the following spices together and rub the outside of the tri-tip with them. Place the tri-tip into a Reynolds cooking bag with 1 cup water fat side up.

Cook at 300 degrees F. for about 3 hours. Careful not to burn. Check on the Tri-tip every half hour. At the 2 hours mark, insert a fork into the middle of tri-tip to see if it is starting to fall apart. At 3 hours it should pull apart easily. If not, cook an additional 30 minutes.

Open cooking bag. Remove the garlic cloves out of the meat and set aside. Pull the meat apart (removing the fat at this time). Place on sandwich rolls and top with the salsa.

Mix the salsa ingredients together and serve as a condiment on the tri-tip sandwiches.
