Chili-Stuffed Rib-Eye with Pineapple Relish

1/2 Cup diced ( 1/4-inch) peeled, seeded cucumber
1/2 cup diced ( 1/4-inch) fresh pineapple
2 tablespoons lime juice
2 tablespoons chopped red onion
1 tablespoon chopped fresh cilantro
1/4 cup chopped serrano chiles (12 chiles)
1/4 cup minced garlic (18 whole cloves)
1 tablespoon olive oil
4 boneless beef ribeye steaks, 1-1/2 inch thick


To make the pineapple relish, combine cucumber, pineapple, lime juice, onion, and cilantro. Store covered in frige at least 1 hour.

In skillet cook chiles and garlic in oil until tender. Cut a horizontal pocket in middle of side of each rib eye steak about three-fourths of the way through meat. Spread 2 tbls. of chile-garlic mixture in pocket of each steak. Secure openings with soaked wooden picks.

Place steak on cooking grate. Grill 10 to 12 minutes for rare; 12 to 15 minutes for medium or 15 to 19 minutes for well-done, turning once halfway through grilling time. Serve with pineapple relish.
