3 ounces pancetta or bacon diced
2 cloves garlic, minced
3 whole eggs lightly beaten
1/4 cup cream
1/2 cup freshly grated Parmesan cheese (not the kind in the green box)
Freshly ground black pepper
1/2 pound spaghetti, freshly cooked, al dente
minced parsley, preferably flat leaf Italian or Armenian
While spaghetti cooks, sauté Pancetta until it starts to brown stir in garlic and set aside.
Mix Parmesan and cream with eggs and a few grinds of pepper.
When spaghetti is cooked, return sauté pan to heat. Toss in spaghetti and stir once or twice then pour over egg mixture and turn off heat. Stir to blend. It will be kind of creamy but will continue to cook and will not have raw egg. Place in a bowl and sprinkle with parsley. Serve with more cheese on the side. Serves 2
