Ravioli con Salsa di Noci (Ravioli with Walnut Sauce)

Ravioli Con salsa di Noci 
(Ravioli with Walnut Sauce)  

2 tsp finely chopped garlic 
1 tsp salt 
3/4 cup walnuts 
1/2 cup heavy cream 
about 10 Tbsp of olive oil 
3 Tbsp grated Parmesean or Romano cheese 
extra grated cheese for topping 


Put everything into a food processor or blender except the oil and cheese.
Process until the content becomes liquified. After it is liquified, and as
you are processing, add oil a little at a time. 

Then add the cheese. It should be the consistency of heavy cream. If it 
isn't...add water from the cooking ravioli. 

Gently heat the sauce. Do not boil as it will separate. Combine the sauce 
with the ravioli and top with grated cheese. 


If you are not making your own, you can get a good frozen ravioli. 
It can be whatever you want. Cook til tender
