Sue Freeman posted 5-17-98 Carl Grostini Culinary Instuctor Pere al Forno (Baked Pears) 6 large pears..make sure they are firm but ripe 1 cup Marsala wine (or any sweet white wine) 1 cup sugar 2/3 cup water 1 stick cinnamon Wedges of Gargonzola cheese as a garnish Wash pears throughly. Cut the bottoms slightly so they sit upright. Place pears in gratin or baking dish and pour wine over the pears. Sprinkle with sugar and add water and put the cinnamon stick in the dish. Bake until done about 1 hour in a 375 F oven. When baked, remove to individual dishes and boil down the liquid left in the baking dish until nice and thick. Don't burn this. Remove cinnamon stick and drizzle over pears. Sprinkle lightly with powdered sugar. Serve with a wedge of Gargonzola cheese.
