Lemon Knot Cookies

5 cups flour
3/4 cup butter or margarine
1 1/2 cups sugar
1 tablespoon baking powder
4 eggs
1/2 cup milk
2 teaspoons lemon extract
1 teaspoon vanilla

fresh lemon juice
powdered sugar

In a large deep bowl cut the butter into flour with a pastry blender till coarse crumbs. Add the sugar and baking powder and stir till mixed. Beat the eggs, milk and extracts and add to the flour mixture. Use a fork and mix till flour is moistened and then work it you’re your hands until the flour is incorporated. Do not over mix or overwork or the cookies will not be tender. When flour is all blended in put mixture into a ball and cover with plastic wrap. Refrigerate at least one hour or more.

Preheat oven to 325 degrees and with floured hands break off pieces of dough and make into a knot shape and put on an ungreased cookie sheet. Repeat till all the dough is used.

Bake 20 mins or till light brown. Put on a rack to cool. You can substitute anise and vanillla if desired. When cool make an icing from fresh lemon juice and powdered sugar. Dip the top of the cookies and put back on rack till frosting is set. Store in an airtight container.
