Italian Potted Beef

3 1/2 lbs rump or chuck roast
2 tablespoons olive oil
1 onion chopped
1/2 cup diced celery
1 carrot, chopped
1 bay leaf
1 teaspoon salt
1/2 cup sliced mushrooms
1 6-oz can tomato paste
1 (10 1/2 oz) can beef broth
1 cup red wine

Heat cooker and add oil. Brown roast. Add prepared vegetables and seasonings.

Blend tomato paste with broth and wine. Pour over meat. Close cover securely. Place pressure regulator on vent pipe and cook 40 min with Pressure Regulator rocking slowly. Let pressure drop of its own accord.

Serve with gravy.
