4 to 5 lb pot roast
2 cups vinegar
2 cups water
3 t salt
1/2 t pepper
2 T brown sugar
3 lg sliced onions
1 lemon, sliced thin
8 or 10 bay leaves, crushed thin
1/4 box pickling spices


Place roast in a large bowl and cover with above mixture; top with weighted plate and let stand in fridge 4 to 7 days, turning each day.

Remove meat from liquid and drain, reserving liquid to be strained. Wipe meat and dredge in flour. Brown meat in small amount of fat. Add half cup of the strained liquid and simmer 3 to 4 hours or until meat is tender.
