Green Rice with Bay Scallops

4 cups cooked rice
3 tbsp olive oil
1 cup onion -- minced
1/2 cup celery -- minced
1 tsp garlic -- minced
1 cup chicken broth -- or bouillion equiv.
1 cup dry white wine
1/2 cup green onion tops -- chopped
1/2 cup parsley -- chopped
1/2 tsp thyme
1/2 tsp sage
1/2 tsp salt
1/2 tsp pepper
Bay Scallops -- enough for 4 people
BAM Bayou Blast


Sprinkle Bayou Blast on the scallops and let it sit for awhile. Set aside.

Chop the onions, celery and garlic in food processor until chopped fine. Saute onion, celery and garlic in oil for 10 minutes. Add broth, wine, green onion tops and parsley. Bring to a boil. Add seasonings and rice. Taste before adding salt as some broths are very salty. Place in 1-1/2 quart casserole and bake at 350°F for 25 minutes or until liquid is absorbed. Add scallops and mix in. Bake for last 5 minutes.
