Lime Sorbet

Lime Sorbet

Juice and grated zest of 4 Limes
1 pint Water
2 tspns unflavoured gelatin
1/4 cup powdered sweetener
1 egg white

Combine lime zest and water, sprinkle over gelatin and whisk well. Heat stirring until gelatin is melted. Freeze as above until mixture is "slushy". Beat egg white to soft peak stage, fold beaten egg white into "slush" and freeze until firm.

Serves 6
