Fruit Prints
1 1/2 cups flour
1/4 tsp. salt
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/3 cup canola oil
1/3 cup undiluted frozen apple juice concentrate, thawed
3/4 tsp. vanilla
1/8 tsp. almond extract
Fruit spread or preserves
Sift together flour, salt, baking powder, baking soda and cinnamon. Add oil,
apple juice, vanilla and almond extract. Mix well, scraping bottom of bowl.
Shape into 1-inch balls. Place 1 inch apart on ungreased baking sheets.
Press thumb deeply into the center of each ball. Bake at 350 degrees for 10
minutes, or until light brown. Cool. Fill thumb prints with fruit spread.
Makes about 2 dozen.
