Banana Yogurt Ice Cream

Banana Yoghurt ice cream

3 tspns unflavoured gelatin
Juice 1 lemon
1 can evaporated milk
1 thinly sliced ripe banana
1 tspn vanilla
3 Sachets (6 tspns) powdered sweetener
1 cup plain low fat yogurt

(All ingredients should be as cold as possible, refrigerate evaporated milk overnight.)

Stir gelatine into lemon juice and heat until dissolved. Using electric beater, whip evaporated milk until thick and doubled. (This will only work if milk is really cold.) Continue beating adding yoghurt. When well combined, add banana slices, vanilla and sweetener and then the cooled lemon juice gelatin mixture in a thin stream. Beat a further 20 seconds.

Cover tightly and freeze as above. Transfer from freezer to fridge 1 hour before serving to soften slightly.
