Crepes: Chocolate Mousse Crepes

Chocolate Mousse Crepes

12 crepes
1/2 lb semisweet chocolate
2 tsp sugar
1 1/2 tsp vanilla essence
1/2 cup boiling water
5 eggs separated
whipped cream
chopped nuts.


Make the crepes, using a sweet crepe batter.

Grate the chocolate or grind in an electric blender Mix the chocolate with the sugar, vanilla and boiling water. Beat until smooth Add the egg yolks one at a time beating well after each addition

Beat the egg whiles until stiff. Fold gently into the chocolate mixture. Refrigerate for about 2 hours.

Fill each crepe with the chocolate mouse mixture and fold over. Serve with whipped cream and sprinkle with chopped nuts.
