Icebox Oatmeal Cookies

1 cup shortening
2 eggs
1 1/2 cups flour
1 tsp. salt
1 cup nuts, chopped
1 cup white sugar
1 cup brown sugar
1 tsp. soda
3 cups oatmeal
vanilla


Mix and cream sugar and shortening; add eggs then flour, soda and salt; add oatmeal. Knead to mix then add nuts. Roll in two rolls of waxed paper and let set overnight in refrigerator. Slice and bake in 350 degrees oven for 15 to 20 minutes.




Icebox Oatmeal Cookies

3 cups instant oatmeal
1 cup self-rising flour
1 cup margarine
1/4 cup boiling water
1 cup brown sugar, firmly packed
1 tsp. soda


Mix oats, sugar and flour. Melt margarine and mix thoroughly. Put 1/4 cup boiling water into cup and add 1
teaspoon soda. Stir and as it foams add it to mixture. Roll in long roll, wrap in wax paper and chill. This dough will keep several days in refrigerator. They may be baked as you wish to serve them. Bake at 300 degrees for 6 to 10 minutes.
