Rolled Cookies Watermelon

Watermelon Cookies

1/3 c. butter
1/3 c. shortening
¾ c. sugar
1 cup milk
1 egg
1 t. vanilla
red food coloring
2 c. flour
1 1/2 t. baking powder
1/2 t. salt
1/3 c mini chocolate chips


Icing

1 1/2 c. powdered sugar
1 t. vanilla
Green food coloring
Water


Preheat oven to 350.

Lightly grease cookie sheet.

Cream butter, shortening and sugar.

Add milk, egg, vanilla and enough red food color to make dough look like watermelon flesh.

In separate bowl mix flour, baking powder and salt.

Add to colored mixture and chill 1 hour.

Roll out cookies to 1/4 inch thick and cut into 3 or 4 inch circles.

Cut circles in half to resemble a watermelon wedge.

Gently place on lightly greased cookie sheet and press in mini chips to look like seeds of melon.

Bake for about 8 minutes, just until set, do not brown edges.

Cool.

Prepare icing, mix icing ingredients with enough green food color to resemble rind of melon.

Dip outside edge of cookies in green icing and place on wax paper to cool.
