Pecan Bars

Pecan Bars
(a Karo syrup recipe)

Crust:
2 1/2 c all purpose flour
1 c (2 sticks) cold butter (cut in pieces)
1/2 c sugar
1/2 tsp salt

Filling:
4 eggs
1 1/2 c Karo corn syrup (light or dark)
1 1/2 c sugar
3 tbsp. butter, melted
1 1/2 tsp vanilla
2 1/2 c pecan halves or coarsely chopped pecans


Preheat oven to 350F. Cover a 15X10X1 baking pan with foil. Grease foil.

With mixer at medium speed beat crust ingredients until mixture resembles fine crumbs. Press firmly into prepared pan and bake 20 to 30 minutes or until golden brown.

While crust bakes prepare filling. In bowl beat eggs, corn syrup, sugar, butter and vanilla until well blended. Stir in pecans. Immediately pour over hot crust; spread evenly. Bake 25 minutes or until filling is firm around the edges and slightly firm in the center. Cool and cut into bars.

Note:Try to use a pan with as high a rim as possible so the filling doens't spill. These bars are hard to cut for a nice presentation. I generally freeze them in sections with the foil stuck on. I cut them after slightly defrosting them with a rocking motion of the knive and then peel off the foil.
