Chili Con Tofu

1 medium onion, chopped
2 cloves garlic, minced
2 to 3 Tbsp. oil
2 (16 oz.) cans tomatoes, broken up
3 1/2 c. cooked kidney beans (two 16 oz. cans)
1 1/4 c. bean liquid or water
2 tsp. or 2 cubes beef bouillon
2 tsp. chili powder
1/2 tsp. cumin
3/4 tsp. salt
1 bay leaf
1 tsp. honey
2 lb. frozen tofu, thawed, water squeezed out and crumbled

Saute onion and garlic in oil. Add remaining ingredients. Bring to a boil; reduce heat and simmer, covered, for 1 hour. Serves 8
