Quick Chili Rice 
  
1 1/2 lb. ground beef (or turkey) 
1/2 cup chopped onion (or onion flakes will work) 
1 tbsp. chili powder ( I add more) 
1/2 tsp. dry mustard 
1 cup diced green pepper (or pepper flakes will work) 
1 (15 oz.) can tomato sauce 
1 (4 oz.) can sliced mushrooms, optional 
1/2 cup water 
1 cup instant (Minute type) rice 
1/2 cup shredded cheddar cheese 
Brown beef and onion in a skillet. Drain off fat. Add spices, green pepper, mushrooms, tomato sauce and water. Cover and bring to a full boil. 
Add rice, stir well. Reduce heat, cover and simmer for about 5 minutes. Sprinkle with cheese before serving. 
4 servings.
