Beef: Healthy Chili

Healthy Chili

2 pounds ground beef
2-3 (16 oz.) cans fancy red beans, rinsed and rinsed
Mama’s Seasoning Mix, about 4 tablespoons or to taste, see recipe below
2 envelopes dry onion soup mix
2 large cans chopped tomatoes
2-3 cans water
3 teaspoons beef bouillon

Brown ground beef; drain and rinse with hot water. Return beef to pan. Add beans, Mama’s Seasoning Mix, onion soup mix, and tomatoes. Add water according to how thick you want it. Bring to a boil and add beef bouillon. Cover and simmer for about 3 hours, stirring occasionally.

Mama’s Chili Seasoning Mix

1 cup chili powder
8 tablespoons cumin
8 tablespoons instant minced onions
4 tablespoons paprika
2 teaspoons salt
8 teaspoons dried cilantro
4 teaspoons garlic powder
2 teaspoons red pepper
2 teaspoons crushed thyme
1 teaspoons ground cinnamon

Mix together in food processor and store in a sealed jar.
