Vegetable Yellow Squash by Leigh

2 lbs. yellow squash, cut into 1/4" slices
1/2 c. water
1/2 tsp. salt

Combine and bring to boil. Cover, reduce heat, and simmer 10 min. Drain well!!

1 c. onion, chopped
1 c. red pepper, chopped
1/4 c. butter
Saute onions and pepper 5 min. Add squash and next 6 ingredients.
1 large egg, beaten
4-6 oz. sharp cheddar, shredded
1 small can water chestnuts, drained
2/3 c. Miracle Whip
3 tsp. sugar
1/4 tsp. pepper

Spoon into geased casserole dish and bake for 30 min. at 350. Can make ahead up to 2 days in advance. When ready to bake, remove from refrigerator and let stand for 30
